May and Norway celebrate 17th of May – their National Day and they are really good to celebrate that day. We would like to highlight that beautiful country and their traditions this month by sharing some recipes on what to eat during their National Day.

At the same time we would like to share the happy news that we during 2023 helped out on a first investment in Norway and we see a lot of potential for more of that.

April and the nature are full of energy and everyday there is something new to discover after the winter sleep. Everything is fresh with a new start and full of taste and power and it is high time to fire up the BBQ if you haven´t already done it.

Here we share a recipe with reindeer cooked in a pan but you can use other type of wild meat and heat it up on the BBQ. Enjoy!

February and different kind of school breaks around Europe. Up here in the Nordics ski season, both X-country and down hill is still very much possible to enjoy. We know that almost everyone these days are experts on how to create a really juice burger after some years of burger mania in restaurants and at home.

But it´s always good with some new inspiration, don’t you agree?

To share some knowledge about a great place to test a burger or things to add we recommend you to check out the following.

Merry Christmas and a Happy New Year!

December and a lot of discussions on what to eat. Both during Christmas time and later on New Years Eve. But one of the other days it might be nice to test something other than Christmas food, what about this one (In Swedish this time):

Viltgryta med ädelost
Mustig viltgryta som värmer i vinterkylan.

4 portioner

700 g grytbitar av älg (även vildsvin, hjort eller rådjur funkar)
1/2 dl koncentrerad viltfond
1 gul lök
2 palsternackor
2 morötter
2 vitlöksklyftor
Olja
Salt och peppar

Marinad
3 dl rödvin
1/2 dl rödvinsvinäger
2 msk krossade enbär
1 tsk torkad timjan

Sås
300 g champinjoner
50 g ädelost
3 dl vispgrädde
1 msk soja
1 msk svartvinbärsgelé
Maizena

1. Häll ingredienserna till marinaden i en plastpåse.

2. Ansa köttet om det behövs. Skala lök och rotfrukter och skär i stora tärningar. Lägg i marinaden och pressa ner i vitlöken. Blanda ordentligt och låt marinera i kyl ca 5 timmar.

3. Värm olja i en gryta. Plocka upp köttbitarna ur marinaden och bryn dem lätt i oljan. Tillsätt marinaden med löken och rotfrukterna samt häll i fonden. Småkoka under lock ca 1 1/2 timme eller tills köttet känns mört.

4. Ansa svampen och skär i kvartar. Fräs i smör och tillsätt dem i grytan tillsammans med smulad ädelost, grädde, soja och gelé. Red med majsstärkelse. Smaka av med salt och peppar. Garnera med persilja.

November and people are starting to prepare to get in the right Christmas mood. In the Nordics and especially in Sweden we have a great selection of game meat such as roe deer, wild boar and elk to choose from if we would like to enjoy something is really local and environmentally friendly food. Why not give the wild boar meat a chance?

September recipe – summer ending BBQ

To get the most out of the ending Nordic summer we would like to propose a weekend BBQ for the family.

With the beginning of fall we get a lot of delicious food from the woods like mushrooms, berries and if you’re lucky to have a hunter in the family you might get some great meat to put on the grill.

It’s also a great way to save a little on the higher than usual electricity bills we’re experiencing right now.

The below recipe (in Swedish) pairs great with a sauce from freshly harvested chanterelle and some Mariestad beers.
